Bonus REcipes for Soy Ginger Salmon and Sweet Potatoes

Salmon Cobb Salad


This salad is delicious with the creamy lime dressing below, but you can also use your favorite prepared dressing. If the vegetable toppers here don't appeal to you, use the raw chopped vegetables of your choice. Carrots, celery, zucchini, or mushrooms are all good options.


  • Juice of 2 limes
  • 2 teaspoons Dijon mustard
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons full fat sour cream
  • 2 tablespoons extra virgin olive oil
  • 3 romaine lettuce hearts, washed and chopped (about 8 cups)
  • 1 pound leftover soy ginger salmon, broken into chunks
  • 4 slices cooked bacon or turkey bacon, crumbled
  • 2 hard boiled eggs, coarsely chopped
  • 2 plum tomatoes, diced
  • 1 cup sliced English cucumber
  • 1 small red, orange or yellow bell pepper, chopped
  • 1 large ripe avocado, diced
